Water process decaf: what it is and how it differs
December 3, 2026 · 2 min read
Water process decaf removes caffeine from green coffee using only water and filters, with no solvents. It is the method that best preserves the coffee's original flavor. Afterwards it is roasted like any other coffee.
First: caffeine is removed before roasting
All decaf is made from green coffee, before roasting. The beans are moistened so the caffeine can dissolve and come out. What changes from one method to another is what is used to remove it.
The methods
- Solvents: substances such as methylene chloride or ethyl acetate bind to the caffeine. The beans are then rinsed and dried. This is the most common method, and it is regulated.
- Carbon dioxide: under high pressure, the gas works as a solvent. It is used mostly at industrial scale.
- Water: only water, time, temperature and carbon filters. This is the one we explain here.
How the water process works
- The green beans are soaked in hot water. The caffeine dissolves, but sugars and flavor compounds come out too.
- That water runs through carbon filters that trap the caffeine and let everything else pass.
- The water is now full of coffee flavor but has no caffeine. It is used to soak the next batch.
- Since that water is already full of flavor, the new beans release only their caffeine and keep everything else.
- The beans are carefully dried and are ready for roasting.
There are versions of this method in several countries. One of the best known is done in Mexico with mountain water.
How it shows in the cup
A good water process decaf tastes like real coffee, with body, aroma and sweetness. Roasted well, it is hard to tell apart from regular coffee. The beans come out a little darker, so the roaster adjusts the roast so it does not go too far.
Two common questions
- Is it caffeine free? No. Almost all of it is removed, but a very small amount remains. For most people it is like having no caffeine at all.
- Who is it for? People who want an afternoon coffee without losing sleep, people who get jittery from caffeine, or people whose doctor told them to cut back.
At Café Wadi we have freshly roasted decaf, so you do not have to give up your afternoon coffee.
